Take 2 cups Flour

Prepare 2 pc Cardamoms
Take 2 Cloves
Prepare 2-3 strands Mace/Javitri
Take 2-3 Onions medium make paste
Make ready 1 tsp Ginger paste
Make ready 1 tsp Garlic paste
Prepare 2 tsp Cashew paste
Prepare 1/4 tsp Red chilli flakes
Prepare 1/4 tsp Red chilli powder
Prepare 1/2 tsp Kitchen king
Make ready 1/4 tsp Garam masala
Prepare 1/4 tsp Turmeric powder
Make ready 1 pinch Sugar
Prepare As per taste Salt
Make ready 150 ml Milk
Make ready 2 tsp Fresh cream
Make ready 1/4 tsp Kewra water
Prepare For Quiche Filling:-
Take 2 Eggs
Take 4 tbsp Fresh cream
Get 1/2 cup Milk
Take As per taste Salt and pepper

Instructions to make Awadhi Gobhi Quiche/Pie:
For the Base:-Take the flour,add the salt and the butter and start rubbing the butter into the flour.
We need this kind of a crumbling texture.
Gradually add the ice cold water and and form a stiff dough.
Let's refrigerate the dough for minimum 2 hrs
Remove the dough and start rolling it very gently.
Take a glass baking dish and place the Base and adjust the sides.Now we will blind bake the base.Place a foil over the rolled dough and place some Garbanzo beans.
Preheat the oven to 200⁰ C and bake the base for 15 min.set aside.The base can be made upto 3 days in advance too
Cut the Gobhi lengthwise and Pan grill till golden brown on both the sides drizzling some oil.set aside.
Prepare the gravy:-In oil add the whole spices mentioned and let them splutter till nice aroma fills the air.Then add onion paste and fry.Then add ginger and garlic paste and fry till golden brown
Add cashew paste,redchillie flakes,redchilli powder,turmeric powder,kitchen king masala,garam masala,sugar and mix well.Add little water to cook the masalas.cook till oil separates
Adjust the salt, add the milk,cream and the kewra essence
Set aside the gravy
Take the eggs,cream, milk,salt & pepper and whisk.Add our Awadhi gravy to the egg batter and whisk again
Add more gravy till it's a thick batter.Now fill this batter over our Quiche base.Add the pan grilled Gobhi in it
Preheat the oven to 180⁰C.Layer the quiche dough above the gravy too.Make a lettuce pattern or whatever you like and bake for 35 to 40 mins.
Slice the Quiche and serve warm.They are best enjoyed as it is but you can serve it with some more Awadhi gravy and salad
This is my take on the Awadhi Gobhi and believe me it's all polished off..The tantalizing Awadhi gravy with the crispy Quiche dough and the suttle Kewra scent made the dish amazing
